An ingredient can do several jobs at once. Eggs bind, trap air when whipped, emulsify fat and water, and add moisture and structure. A good substitute has to cover the jobs that matter in that particular recipe. That is why "what can I use instead of eggs?" gets a weaker answer than "what can replace 2 eggs in banana muffins, where they mainly bind?" Leaveners are where swaps fail most often. Baking soda is a base. It only releases carbon dioxide when it meets an acid, such as buttermilk, yogurt, brown sugar or lemon juice. Baking powder contains its own acid. Baking soda is roughly three to four times stronger, so the two cannot be traded one for one. Replacing buttermilk with plain milk removes the acid, which can mean less rise and a soapy aftertaste, unless you add lemon juice or vinegar to the milk. Some swaps simply won't work. Soufflés, custards, meringues and angel food cake rely on eggs as their main structure, and binders such as flax can't replace that. Aquafaba, the liquid from cooked chickpeas, is an exception: it whips like egg white and can make meringues. Honey for sugar is a partial swap. Honey is a liquid, it tastes sweeter and it browns faster, so the liquid and oven temperature usually need adjusting. The main misconception is that a substitute works everywhere. A swap that is fine in a stew may fail in a layer cake. Another risk is that a model may propose a swap confidently when none is good. Ask it directly when a swap won't work. Allergies need extra care: an AI suggestion is not a safety guarantee, so read product labels and consider cross-contact.

Assistants are getting better at explaining why a swap works and at saying when a request has no good answer. Some recipe platforms are adding substitution suggestions directly to their recipe pages. The physical chemistry stays the same: leaveners, proteins and fats behave as they always have. So the most useful habit will remain describing each ingredient's role and testing an important swap on a small batch first. For allergies, labels and medical advice still outrank any generated suggestion.

Out of buttermilk for pancakes: stir 1 tablespoon of lemon juice or white vinegar into 1 cup of milk and let it sit 5 to 10 minutes, which supplies the acid the baking soda needs.

Out of baking powder: combine 1/4 teaspoon baking soda with 1/2 teaspoon cream of tartar for each teaspoon of baking powder the recipe calls for.

Making muffins egg-free with a flax egg (1 tablespoon ground flaxseed plus 3 tablespoons water, rested until thick). It binds well in muffins, but the AI should warn that it won't work in angel food cake, where whipped egg whites are the structure.

Out of cake flour: measure 1 cup of all-purpose flour, remove 2 tablespoons and replace them with 2 tablespoons of cornstarch to lower the protein content for a more tender crumb.
