To convert recipe measurements with AI, ask it to turn volumes (cups, tablespoons) into weights (grams), or metric into US units, and name the exact ingredient and how it was measured.
A cup of flour and a cup of sugar weigh very different amounts. This matters because weighing is more accurate than measuring by volume, and every AI conversion depends on a density assumption that varies by ingredient, brand and measuring method.
Volume measures space, while weight measures mass. How much mass fits in a given space depends on the ingredient's density and on how tightly it is packed. That is why there is no single "cups to grams" number. Commonly used reference values are about 200 g for a cup of granulated sugar, about 227 g for a cup of butter, and about 237 g for a cup of water. For all-purpose flour, estimates run from about 120 to 130 g depending on the source. King Arthur Baking, for example, uses 120 g. Packed brown sugar is heavier than white sugar per cup. The units themselves also differ. A US cup is about 236.6 ml. The metric cup of 250 ml is used in Australia and New Zealand and appears in some Canadian recipes. A US pint is about 473 ml, while an imperial pint is about 568 ml. Tablespoons differ too: about 15 ml in the US and UK, and 20 ml in Australia. A frequent misconception is that "8 ounces equals a cup" for everything. That holds for fluid ounces of water-like liquids, not for ounces of weight. A cup of flour weighs about 4.2 to 4.5 ounces, not 8. To convert temperatures, °F = °C × 9/5 + 32. So 350°F works out to about 177°C, which recipes usually round to 175 or 180°C. Checking AI output is easy with a few fixed reference points. If a model says a cup of flour weighs 240 g, it has probably used water's density. If it treats an Australian tablespoon as 15 ml, the amounts will be off by a quarter.

Assistants that can call calculators or reference databases should make conversions more consistent than recall alone. More recipe sites now publish weights alongside volumes, which removes the guesswork at the source. The core uncertainty remains: packing, brand and humidity change how much a cup of an ingredient weighs. For baking, a kitchen scale is still the most reliable tool, and AI is most useful for explaining and checking the numbers.

Converting a US recipe's 1 stick of butter, which the AI should give as 1/2 cup, 8 tablespoons or about 113 g.
Following an Australian recipe and asking which tablespoon it means, because an Australian tablespoon is 20 ml while a US tablespoon is about 15 ml.
Converting a British recipe's 180°C oven temperature and asking whether that setting assumes a fan (convection) oven, since fan ovens are often set about 20°C lower.
