Adapting recipes for food allergies with AI means asking a chatbot to rewrite a recipe without specific allergens, suggest substitutes that still work in the recipe, and flag ingredients that often hide those allergens.
It saves hours of research. The final safety check on labels, brands and cross-contact still has to be done by a person.
A language model is good at the pattern-matching side of allergy cooking. It has absorbed many substitution discussions, so it can tell you that a flax egg (one tablespoon of ground flaxseed mixed with about three tablespoons of water) binds a muffin batter but will not whip into a meringue, while aquafaba, the liquid from canned chickpeas, can. It also knows common hidden sources: whey and casein in some products marketed as non-dairy, wheat in regular soy sauce, barley in malt vinegar and malt flavoring, anchovies in Worcestershire sauce, and egg in some fresh pastas and glazes. What it cannot do is see the package in your hand. Formulations change, the same product can differ between countries, and a model's training data may be years old. In the United States, the Food Allergen Labeling and Consumer Protection Act requires major allergens to be declared, and the FASTER Act added sesame as the ninth major allergen, with labeling required from January 1, 2023. The European Union requires 14 allergens to be emphasized on labels. But precautionary statements such as "may contain" or "made in a facility with" are voluntary in the US, so a label without one is not proof that a product is safe. Cross-contact is the other gap. An allergen can move from a shared toaster, fryer oil, cutting board or bulk bin into food that contains no allergenic ingredient at all. AI can remind you of these risks, but only you can control your kitchen. One common misconception is that "gluten-free" and "wheat-free" mean the same thing. A wheat-free product can still contain barley or rye. Another is that a substitute that tastes right is automatically safe. The substitute's own ingredient list still has to be checked.

Some grocery apps and AI assistants can already read photos of ingredient labels, and that should keep improving, making it easier to check a product against a personal allergen profile in the store. Linking recipe tools to current product databases could reduce the problem of outdated formulas, though this only works if manufacturers keep their data up to date. None of it removes the need for human judgment about cross-contact in restaurants, shared kitchens and factories, which no recipe tool can see. For people with severe allergies, AI is best treated as a research assistant that speeds up planning. An allergist's advice and your own label reading remain the final authority.
A parent pastes a family lasagna recipe and asks for a dairy-free and egg-free version. The AI swaps the ricotta for a blended tofu-and-lemon filling, suggests egg-free dried pasta, and warns that many parmesan-style shreds contain casein.
Someone with celiac disease asks why a supposedly gluten-free stir-fry made them sick. The AI points out that standard soy sauce is brewed with wheat and suggests a tamari labeled gluten-free.
A baker converting chocolate chip cookies to gluten-free asks why the dough crumbles. The AI explains that gluten-free flour blends need a binder such as xanthan gum and benefit from resting so the flour can absorb liquid.
A host cooking for a guest with a sesame allergy asks which ingredients to double-check. The AI flags tahini, hummus, many breads and bagels, and dressings or marinades made with sesame oil.
