The classical French framework associated with Auguste Escoffier groups many sauces under five mother sauces: béchamel, velouté, espagnole, tomato and hollandaise. Knife skills are where text falls short. A model can describe the pinch grip, where the thumb and index finger hold the blade itself, and the claw, where the guiding hand's fingertips curl under. You still need to watch someone do it and repeat the motion. Mise en place, having everything cut and measured before the pan heats, keeps practice calm. A common misconception is that knowing the explanation means having the skill. Understanding shortens the learning curve. Only repetition builds the skill.

A home cook uploads a photo of a thin, greasy pan sauce. The AI suggests reducing it longer and whisking in cold butter off the heat so it comes together.
